Ham with macaroni and cheese with frozen corn cut off the cob (this past summer) for Christmas eve, and prime rib with roasted little red potatoes and fresh green beans for Christmas day. I do my prime rib as Erakad does, adjusted for altitude. I foresee a lot of leftovers in my future.
