Glen - I don't disagree that it will be a long time until plant based food is in the vocabulary of most, but, large corporations are now getting into the game. With that comes money for lobbying and marketing. The medical community is starting to take notice of all this as well. There is compelling evidence that a plant based diet reduces and/or eliminates many of today's worst medical maladies. Again - it will be a long road as most in medicine have had little nutritional training.
And one other point - plant based food is not about salads. There is an incredible amount of R&D the food/culinary world around making plants better and more satisfying.
