Been 6 times - I agree with Stealthn, Tevake and JW...
My vote: Kauai. Relaxed, not built up but has a Walmart and Costco for you. Nice beaches and rural areas.
Maui - Like John said, built up, congested, traffic and all that stuff you're trying escape....Enjoy.
