As a quick meal I used to buy the Zatarins or Tony Chachere Gumbo mix with rice in a box for about $2. Add a pound of authentic Andoullie sausage and a 10 oz. can of chicken. 20 minutes later you are eating. Then for the next 3 days my feet and ankles would feel like they were going to explode from all the fluid in them due to the mass dose of sodium I took from the gumbo. Same goes for boiled crawfish. The entire New Orleans/South Louisiana region sees a sharp increase in heart attack/stroke issues every year during crawfish season due to the liberal use of salt.
