If you are going itb then you could find a set of itbs that incorporate drive by wire into them and then swap out the pedal for a gm floor mount or maybe Nissan or something. That would put the sensor on your pedal and the (pwm, or stepper I don’t know which) throttle motor on the itbs then it could all be done through whatever ecu you would be using. I’d attempt to avoid adding a whole second controller box for the throttle as that is just pointless complexity
