Oh that's plain old horse puckey.
You are assuming every shop has the same skill set to lay down and hand finish paint and the $35k delta is pulling off rubber seals, windows and re-installing after painting.
I would say the higher end shops that charge 20k plus eat time, lots of it, to have the paint job live up to their reputation.
The 5k jobs that are good - them guys eat time too.
It's shiet/grunt work.
