I've never had them pickled, but I'm curious. I've had the juice, and I've had them roasted. I guess I've probably had them pickled out of a jar/can on a salad, but I'm sure that's nothing like you're eating. THey are great for blood pressure. I think I've read that beets or beet juice will drop your BP by 10 points or something like that.
We've been making our own fermented foods for a while. I've had particularly good luck with sauerkraut, I've made some regular pickles, yogurt, kefir, kombucha, and the other day as an experiment, I fermented some beans. I hear that beets are a great addition to sauerkraut, but i always forget until it's too late.
I've never experienced the magenta urine, but you can poo a color that you wouldn't normally want to if you eat enough beet products. Fortunately, beets don't seem to stain stuff.
