Iowa has some really awesome hiking areas in the northeastern part of the state along the IA/WI border on the Mississippi River. Everything else further west isn't worth the travel if you want hiking although the shooting options get better the further you go into Iowa. Forget Nebraska for hiking unless you go way out west which is quite a journey into no man's land.
An area I've never been but always wanted to go is Yellow River State Forest. They have tent camping, hunting, fishing, hiking, equestrian trails, etc. Here is the website:
