Ended up going the PC-7 route.
I picked up some bar stock and JB welded the stock brackets to the bar stock.
Then used the impressively thick PC-7 to attach the bar stock to the countertop. 24hr cure at 70F. Plastic grocery bags were perfect to prevent the clamps from sticking.
