And do you know if you can just cut off the stem of the chandelier plant once the flowers fall off it? We've got some that seem to have run their course for the season but I can't find anything on pruning them.

Regarding your Amaryliis, you could dig them up anytime you want to transplant but I would wait at least until they are done blooming so you can enjoy the bloom(s) first.
And the Chandelier Palnt you speak of - if it is this one -
Kalanchoe delagoensis, then absolutely remove the flower stalk after blooming is finished. Kalanchoe's in general are survivors and very hard to kill.
