I’ve never tried Vietnamese food because the dishes smell nothing like Chinese, Korean or Japanese food to me so I’ve been reluctant to eat the stuff. My wife dragged me kicking and complaining to a pho place for lunch. I’m a fan now of vegetarian pho with tofu. That placed rocked. I’m going to try satay tofu and veggies in vermicelli next. I wonder if I can make pho at home?

You guys like Vietnamese food? Have you tried making it yourself? Got a good recipe?

Love it and all other from that general part of the world. Never tried to make it though. My wife always gets the stuff with knuckles, cartilage, etc. & whatever they couldn't get into the garbage can.

yes you can - and you can put meat in it

and... you can put raw sliced meats i and let them cook in the broth

To make the broth, it takes many, many hours. Best to just get it from a restaurant.

just had some brisket pho few days ago. been getting it once a week. i’ve eaten so much of it that i’m now sick of it. i much prefer good ramen. i think i’m mostly getting sick of rice noodles

it’s likely the fish sauce in vietnamese food you don’t love. i love it.

my wife made me some pho once and it was good but not quite exact. time consuming but so is proper chicken soup from scratch

We have a Pho place up the corner. Legit place, 2 sisters opened it up and have their mom running the kitchen. They assure us we are eating what they eat at home.

We love it, it's in our rotation now.

Are you vegetarian? only asking because the foundation of Pho is good good bone broth... Some places I've seen boast years old mother stocks

Lover here - we go to a place a little up the road. Quite fantastic. My fave is chicken and crispy noodles. Daughter goes with a grazing appetizer plate - veggies and shrimp. Son nails half a cow in broth.

I make Pho at least 3x per month. My whole family loves it. There are many ways to make it; learn and enjoy your favorite ways at home and you are set!

Pho is yummy.

Best I’ve had is at a cash-only place in Seattle, not far from the ballpark. The owner was an older, no-nonsense lady, the broth was incredibly rich. It was the perfect meal for a rainy day.

Love pho, especially the brisket type. Also enjoy 99% of the Vietnamese dishes. They are not that different than most Asian foods.

My kids and wife loves it. Me, I like their rice dishes more. broken rice with baked egg, shrimp paste and a bit of beef. The best. Love their shrimp spring rolls too. I am like Merv, love most foods from that region. As a matter of face, I love foods from the tropics because they are usually full of spics and sources then there are some those foods that I would never eat.

ah...

We have one Cambodian eatery here, and nobody can figure out how it is different from the Vietnamese places.

By nobody, I include several Asian-Americans tho I don't know if any are Cambodian- or Vietnamese-Americans.

I’ve been cooking Vietnamese food for years. Making the stock for pho is not something I’d recommend at home. Much cheaper and much faster to just go to a pho restaurant when you want some.

Plenty of cookbooks out there, no need to talk about recipes here. I will suggest that any condiments you buy, you pay attention to where they come from.

CD55 - are you still vegan?

I hit a Vietnamese joint weekly, for lunch when it isn't COVID season. Bay Area has excellent Pho. That said, I prefer bun bo hue which is a different style soup with vermicelli noodles from the Hue area and if you are in a reasonably authentic restaurant (you can tell because there are >50% Vietnamese patrons) you will get it with the right gristly cuts of meat and cubes of pig blood. It is fantastic. If you are still vegan, well, then maybe not something to try.

I have moved to a largely plant based diet, so going back to work I'll have to see what I do about my weekly bun bo hue ... it is probably more cholesterol than I eat all week right now! ;)
