Bob Kramer makes some really special knives. I want one of the meteorite bladed knives like he makes.

Don’t know how they work in the kitchen but they’re beautiful and some of them run up to $20k. Probably worth it for the work and expertise that go into them but I’d never buy one.

The shuns are all powdered metal blades AFAIK, so the different patterns are just marketing gimmicks. Not sure what the Zwilling/Kramer knives are using.

These are my go-to for kitchen use. I'm not super knowledgeable as far as kitchen knives are concerned & tend to replace the ones I use most every three to five years. I don't spend a lot on them, because my wife is a knife killer - throwing them in the sink, pans, etc., washing them in the dish washer & all kinds of other horrible things. I have three cleavers. The one pictured, I've had for maybe forty years or more. I don't see any reason to buy sets.

+1 on the 3.5" Paring knife. I use that one 99% of the time
The 1% is 8" Chef's knife to chop a block of asparagus in one shot.

No need to spend $400 on knives.

Wow, step away for while and come back to a wealth of information!

Liking the idea of going with a starting lineup of knives. I have 3-4 in the rotation, so I'd agree I don't need a whole set. Seems like a LOT of people buying stuff as a lot of stock is sold out.

Maybe I'll hit the thrift stores this weekend and see if I can find anything interesting..

You're better off with one great knife than a set of generic ones. If you're on a budget, just buy the Wusthof 3.5 for $50.

Check CL. We sold off a bunch recently, with a lot of interest. Just like my bicycle and dirt bike. It looks to me that COVID has everyone home cooking, wanting better knives!

I bought a set of Henkel Pro S knives back in my Navy days when I went to Singapore. I still use them every day. They sharpen right up and the edge lasts, which is what I like about their slightly softer steel.

I have been using Dexter Russel Connoisseur knives for years. I have the 10" cooks, 3" pairing and a boning knife. It seems like we all have different brand preferences but use the same style knives for the most part.

I checked out our local thrift store for knives once out of curiosity when I went there with my wife. They didn't have any, & I asked why. They said they didn't want any utensils in the place that could be used as weapons.

Probably the best knife you have is on the left of the second from the top photo. The rest are all junk except the Classic Wusthof.

I have a Kitchen Aid santoku which doesn't hold an edge.

The Wustof is indestructible and has never been sharpened.
If you are going to be buying only one set on knives in your entire lifetime..

I've got an assortment of knives. All of them I found at Home Goods at various times always looking for German made Henckles and Wusthof and various Shun knives.

I have a few vintage from garage/estate sales. I keep them all sharp with one of these and also a sharpening steel....
