My bad. Missed your test fit comment.
It looks low though, shouldn’t it be up to the bottom of the old granite?.

Ah, I see what you want now. Thing is, I would have done what Dad911 said, use the sub top until the quartz tops is ready to be installed. 10 days? If done that way, installer can get accurate measurements and no jiggling the sink around to make for a perfect fit. I am not liking the 2x cleat holding up the sink. That sink filled up with water is heavy. A few screws into 3/4" plywood (or particle board?) side makes a contractor like me think about potential law suits in the future if things get worn or goes bad. Sink needs to be flush with top of plywood.

The sink is about 1/16” lower than the bottom of the granite (camera angle makes it look like that).
The supports are actually pretty ingenious, I purchased a kit from https://sinkmount.com/product/petes-sink-mount/#
It is an adjustable stainless kit specifically for these types of sinks. The mounting brackets can adjust the height of the sink after install to insure a perfect fit.

Small grinder, diamond blade. Many times, my installers will hold a wet sponge and have that riding up against the blade to keep dust down. My suggestion is to tape as much plastic as you can around the sink area before you have a go at this. Diamond blade on a circular saw will work too.

Drill a small hole on the bottom of a small water bottle (hole on cap so it breaths), place it over the cutting path or on the blade as you cut to keep dust down. Its a mess but it will help some.

My old neighbor had granite backsplash and when he replaced his microwave he needed to cut the granite. He came to me for advice and this is exactly what i did after i tried to explain it to him but he was too chicken to do it. Worked like a champ.
