I'm learning that it's almost a coin flip.

OK, today you like watermelon? We'll get you some watermelon. Just eat, child...

"three square meals/day" for us is averaged over a week (or more)

Teriyaki chicken will make you fat…

Add roasted chicken… shredded chicken thighs are great.

I also take a cue from the French and add things like: blanched, crisp tender haricot vert; sliced boiled new potatoes or fingerling potatoes; garbanzo beans; frisée; lardons; cherry tomatoes; 7 minute eggs… chop everything up small and eat it with a spoon. Traditional French vinaigrette, or olive oil and lemon. Season all the ingredients separately, before you add them to the salad.

You can make a salad that absolutely does not suck.
