What to do with our Limes?

Have a Mexican Lime tree and it has exploded with fruit, made some Pies, giving a bunch away, anyone have a good limoncello recipe that uses Limes instead of Lemons?

Donate to local food bank. Our church as a Foodbank and one of the members of the church has a bunch of lemon trees and orange trees in their yard. About twice a year they call us and we stop by and pick them up. They already picked them and put them in boxes. One way to get rid of them.

Juice them, then make ice cubes.

simple use:

1 cube + 1 shot tequila


slightly more complex:
thaw out ~1 cup (or use juice now)
cubed fresh fish
chopped onion (and tomato/ cilantro/ etc)

soak for 3 to 4 hours and you've got ceviche

juice them then freeze the skin. Use the frozen skins to clean your garbage disposal. Juice the peals to make a cleaning freshener to add to various cleaning solutions. Waste nothing. OH and all of the other things listed above.

I'd just do the same as for limoncello - maybe add some citric acid ("sour salt" in your grocery's Kosher aisle) as limes aren't quite as acidic as lemons or you could tweak the sugar/syrup to balance. Once I get your address I'll be by soon regardless - I'm sure it'll be good.

Also, lime marmalade for gifts. Salted limes/lime pickle as is done for Indian food. Dried lime slices for fancy cocktail garnishes are also a gift idea if you have cocktologists in your circle.

I feel your pain - here in the high desert we get late killing frosts half of the years, the other half we get five families' worth of apricots from our two trees. Had a big haul this summer and I'm sure there still are 2020-vintage apricots at the bottom of the freezer. We turned into the Gump of apricots....

There's pineapple lime, lemon lime, coconut lime, pepper lime, lime soup, lime stew, lime salad, lime and potatoes, lime burger, lime sandwich.

I’m jealous! Ours and our neighbors citrus trees died during the freeze a couple years ago. Margaritas at home have been a challenge ever since.

One neighbor with a grapefruit tree would put a bag of grapefruits on the other neighbors doorsteps.

That's what I would do as well.
I can leave a stump on the end of my driveway and someone will eventually pick it up.
