Speaking of different interpretations, YMSB's bluegrass cover of the Stones' 'No Expectations' is my favorite version. For me, it's the definitive one, as I had somehow never heard the original before I heard this one. Plus I love Bluegrass. I've been listening to YMWB since the early 2000s so I picked a version from then.

Make Bruins Great Again

Not as good but a decent cover. You gotta pretty brave to do a cover of Zeppelin (especially if you are a drummer). The best Zeppelin cover I have ever heard was when Heart did Stairway at the Kennedy Center Honors Led Zeppelin. I'm sure its been posted already but it is worth hearing again.
Having Bonzo's son on drums was touching and having the entire choir wearing the derbys was a great tribute to one of the finest rock drummers to ever live.

Cars and Cappuccino

15 years ago before HD video was commonplace. One evening at some non-descript, random, 3 star strip mall pizza joint in the Atlanta suburbs (Smyrna, GA). A local musician Dad climbs on stage with two of his fat, middle-aged band buddies, his high school daughter (17) and her friend (16) and proceed to create this incredible live cover. No auto-tune, no post-production. David Crosby (RIP) and Graham Nash both compliment them. I still find it amazing all these years later.

Don't know if these are "better than the originals" as described by the OP, but this trio of old blues songs were made FM radio famous by rockers. I guess its as good a way as any for youngsters to get indoctrinated into classic blues music.
(I'm a little surprised they haven't been posted yet, but except for Thorogood, they're not that great.)
