The version of "Man of Constant Sorrow" from "O' Brother Where Art Thou" IS a cover"; in my mind, the definitive cover of the classic song.
That a'cappella version is fine, but one listen is enough for me.

I think the mark of a great cover is if the arrangement is significantly different as well. Sinéad did that above, and even more so with "All Apologies."
I like this cover of "When You're Only Lonely." Super smooth, and the lead singer hits the high notes and falsetto so well.
