LOL, and I really did just laugh out loud. oh I'm sure they'd be great! The cheese is great for so many reasons, helping to anchor in the steak tips to texture to of course taste. These were pretty amazing. Modified a common steak tip dry rub that worked well, red pepper flakes and cayenne spicy but not too much, 2 kinds of chili powder but not too much, smoked paprika but not too much, brown sugar but... I was eating the steak right off the cutting board like potato chips.

No good Mexican in the Northeast?? BS

A couple from Mexico City opened a tiny joint right when we went into Covid shutdown...Its like a 5 min walk from my place..

I almost without fail got takeout once a week during that time.. The owners are great people and growing a nice business...

I once asked the owner why she doesn't have Mole on the menu....She told me because she cant make it as good as her grandmother.. same for fish tacos... "Fish tacos are from Baja, not Mexico City"

They do make tortillas fresh every day..

And they make there own Chorizo...
