Got goosed for Xmas

A perfect roast goose, a nice bottle of St. Estephe and the link below makes for a very fine Xmas.

I cooked a goose many years ago. I had to buy it at a butcher and it was rather expensive. I read it would be somewhat greasy, so I follow some advice and stuffed it with apples and such, not much breaded dressing. What came out was good enough, but wouldn't feed very many people. Last goosemeat I ever had.

How was yours? What recipe did you use?

Dottore, the informal rule is that when you post a wine name, you hyperlink to a review of it or a resource for it.

Great pic--looks delicious.. I brined a capon a couple years ago and it was the best fowl I've had.

The Goose looks fab, sadly xmas dinner at my end is always cooked by my mother and she is a turkey fanatic. Maybe if I did the whole thing, goose would be on the menu. Maybe next year I will have to pop a few brave pills and declare "christmas dinner is on me!". That would be interesting!
