That's alright...Southerners are OK with the "imitation/flattery" thing...if you want to add "flatulence" to it, we're OK with that as well.

Can't say I've had Louisiana Chili.

You know, I rinsed the beans before throwing them in there; so far I've been quite inoffensive!

Final product looks pretty darn good... but that pre cook photo reminded me a little bit of

Chili is one of those foods that changes depending upon what geographic area that you might be in.... I have heard of people putting applesauce in their chili, now I for one would not think of that as being a proper addition to chili, but without tasting the final product it is hard to knock it without trying it. I suggest you just send each of us a small sample and let us judge for ourselves.

having moved to the W coast, I'm "down w that"

heard or read recently that l'laya was historically derived from paella - might be in Folse's encyc/cookbook - makes sense to improve on that dish
