Recipe for a light, all-purpose food batter.

I'm looking for a light, batter for onion rings and fish. Anyone have a good recipe they can share?

I made some today for a Monte Cristo but it seemed too heavy, if you know what I mean.

For Monte Cristos I basically make french toast--dip the bread in an egg and milk mixture and fry it. not too heavy.

beer batter is pretty good.
don't crowd the fryer.
try to maintain 350 to 375 degrees.

Add 20-50% rice flour to your batter (assuming your using all purpose flour), and a dash of baking soda and baking powder.

Here's 2 easy tempura batters I use:

#1:
2 eggs
1 1/3 cups flour
1 tsp salt
1 cup flat beer
Beat the eggs in a bowl, add 1/3 cup flour/salt. Add the beer alternately with the remaining flour, beating after each addition. Let the batter stand @ room temp app. 1 hour

#2
2/3 cup flour
3 Tsp cornstarch
1/2 tsp salt
2 eggs
3/4 cup ice water
Stir flour/cornstarch/salt in a bowl. Beat eggs & ice water in another bowl until blended. Add to flour mixture; stir until just moistened. The batter will be lumpy, but don't stir it again. Keep the batter cold by placing it in a bowl set in a larger bowl of crushed ice.

In light of beer you can use club soda. Sure the flavor is not the same, but it works.

Basic Batter - Use with Anything

1 cup All-purpose Flour
1/2 cup milk
1/2 cup water
1 teaspoon baking powder
1/2 teaspoon salt

Mix flour, baking powder and salt together. Add milk and water slowly and beat until batter is smooth.

Yeah, I know that it isn't exactly a health food but some things just NEED to be dipped in batter.;


She loves deep fried mushrooms so those are next on the list.





Yes, I WILL be trying a deep fried Snickers at some point!!!!

Freeze the Snickers and use the store bought funnel cake batter mix.

This is about the LIGHTEST BATTER YOU ARE GOING TO MAKE>..

Let us just try

2 Eggs seperated....

Beat the Yolks with a bit of Salt....and whatever...ya like


Take the EGG WHITES and BEAT THEM TILL NICE AND FLUFFY...FOLD the Egg yolks in the Fluffy Egg Whites...Be carefull not to mix them too much...DIP YOUR SHYTE into the Egg mixture and deep fry....

I have never tried this but it might work, put a bit of self rising flour into the egg yolk mixture...then fold the whites in...

The batter being ice cold and on the thin side helps to achieve a lighter crust

Sparkling water is always a good sub for still water in batter recipes.

i believe since yolks are a fat, they tend to keep your batter from frying up crunchy.

fried right, i dont think the batter will pick up too much fat. i dont make onion rings.

try this, coat what ever you want in a light eggwash (eggs, milk or cream), roll in Panko bread crumbs, BAKE in a 400F oven till crisp enjoy. thats as light as you can get. But, if you have that craving for deep frying, hard to beat tempuri batter.

mix together less beer if the batter gets too thin.
