Soy sauce chicken wings with udon noodles and hot chili oil. Marinated the wings for 2 days and cooked them on the warm setting on my griddle for an hour. Cooked this way, the marinade turned to a gooey sugary caramel cooked into the wings and was INTENSE! In fact I would only go this far with a whole chicken and reduce the marinade less for wings again. Milk stout paired well with the chicken. An IPA would have worked too. Additional spoonfuls of chili oil were drizzeled onto the noodles.

I warned you. What you are about to see, we would regard as a dinner 'fail.' The plan was for fish tacos, and the tortillas were spoiled so we changed the plan. I should say she changed the plan, after the prep work had already been done, so we basically had fish tacos without the tortillas. What you see here is Mahi Mahi fried with mild paprika*, turmeric, garlic powder, oregano and salt.

Also participating is black beans cooked from dried and combined with cayenne, oregano, bay leaf, olive oil and salt. The cut cabbage included rice vinegar, lime juice, Cholula and oregano. Side items were diced red bell peppers, , sliced tiny tomatoes, gucamole, diced jalapeno peppers, diced onion and a special sauce she characterizes as a sort of spicy ranch dressing. Bam. I eat like this every single day. Yes, I know how lucky I am.

* As you surely know, paprika is a family of spices made from anything between, basically, sweet red bell peppers and spicy red chili-type peppers. Or anything in between or combination.

The vegetable shop I go to has great, fresh exotic herbs including Thai basil. May get some next time I pick up some veggies. They also make amazing fresh pasta.

Lots of ways to cook this, I’d suggest you start with the recipe like this one:

Feel free to adjust the quantities. I tend to like a little more garlic, onion and beans. I am also happy to substitute haricot verte for the oriental long beans. If you use the Thai chilies, it’s going to be pretty spicy. Feel free to replace those with one jalapeño or one Serano, if you want. Finding holy basil will be difficult, there are a couple varieties of Thai basil you can usually find in Asian markets.

If you don’t have a really hot fire, you might back off the quantities of the fish sauce and black soy sauce a little bit. Taste for seasoning at the end, I always seem to add a little more salt to season it properly. A little white pepper powder usually makes it into mine.

Try to use good quality Thai fish sauce and soy sauce. If you can’t find that, substitute Vietnamese brands. Chinese black soy sauce might work for the Thai black soy sauce but regular soy sauce won’t. Steer clear of any of the super salty fish sauces, they tend to run around 1200 to 1500 mg per tablespoon. I’m happier at under 1000. Red Boat fish sauce is a Vietnamese fish sauce that’s fairly readily available in stores, if you don’t have a good Asian market nearby.

I grind my own chicken from chicken thighs. Chicken breasts are not a good substitute and I wouldn’t use them in this dish.

I have an Italian deli a short distance away that flies in Italian basil from Hawaii. For 10 or 12 bucks, I can buy a huge bag of it. It’s enough to do three or four good size batches of pesto.

I make traditional Genovese style pesto but also I make pestos with walnuts, almonds and other things.

This is THE basil to get for pesto it won't taste the same grown here, different soil, different climate. Still I'll grow some this summer.

Didn’t feel like spending much time in the kitchen tonight, so dinner was a spaghetti alla chitarra, with a pesto made from jalapeños and walnuts. A little dusting of parmigiano Reggiano and a few grinds of black pepper on top.

I would drink a white wine with this. If you want to stick with Italian wines, maybe a Gavi.

Or, drink whatever you like the best. When it comes to white wine, I tend to like French wines from Bordeaux.

Fried chicken wings three ways: Korean, chili oil and regular with sesame udon noodles and egg yolk with sriracha. My plan came together nicely mixing the egg yolk as a sauce into the noodles and then bits of fried chicken and crust and sauces mixing into the noodles making for incredible flavor bursts while devouring the wings and then having some noodles. Favorite of the three is the Korean by far. A Kirin complimented it all nicely.

There’s a Korean fried chicken restaurant that popped up near me recently. Going to have to give that a try.

I love chicken wings. Got stuck at a car show for an afternoon one Saturday. Across the street was a chicken wing restaurant. My buddy and I split a bucket of 50.

Looking forward to your review. Korean fried chicken wings could be the best way to have wings and I love very very hot buffalos with blue cheese. But they have to be done right. Super crispy crunchy and then tossed in a bowl of sauce and served immediately. One minute from deep fryer to table.

Here you see lamb chops, potatoes with spices lightly steamed and then baked, veggies and a Mediterranean Calamata olive, feta, tomato, cucumber, oregano, vinegar salad thingie. Two glasses of Cabernet lost their lives in the struggle.
