OK...so you're alone during Tgiving and you've been...

...invited to a neighbor's. girlfriend, co-workers for thanksfgiving dinnier. Ya gotta take something. Wanna wow them with a simple recipe?

Here ya go...

Momma's Sweet Potato Souffle


2 40 oz cans drained sweet potatos, mashed
2/3 cups granulated white sugar
1 Tsp salt
4 Eggs (beaten)
2 tsp cinamon
4 Tsp melted butter
2 tsp vanilla extract



Topping:

1/2 cup of melted butter
1 1/2 cups brown sugar
1 cup grated coconut
1/2 cup flour
1 cup coarsely chopped pecans

Mix first 7 ingredients together. Pour into lightly greased casserole dish.

Mix topping ingredients thouroughly. Crumble over potato mixture. Bake at 350* for 30-40 minutes.

You can mix it up the night before, put in fridge and take it for them to throw in the oven if need be.

WARNING: UNDER NO CIRCUMSTANCES PUT MINI-MARSHMALOWS ON IT LEST IT BECOMES A REDNECK CASSEROLE RATHER THAN A SOUFFLE>>>LOL

that makes a pretty large casserole...u might wanta cut it in half. did u ever get a conversion chart from cups to metric?

Baking, OTOH, is a science.

That recipe is fine as long as you get it in the ball park. lol

PM me your address and I'll send you a set of US measureing cups...they run about 5$ at the discount stores her so I think I can swing it. lol

Baking ingredient are mostly measured by weight. 5 oz of flour is all over the place when you need a cup.

Take a dish. There is a good chance they invited another single person. I pie is great plumage.
