The four corners. Inexpensive. Tons to do. Memories forever.

Oh, another option is Lake Tahoe. Fly to Reno and drive to the lake. We did it with our 2 year old. If you love hiking and outdoor stuff, you can't go wrong.

Hawaii? We went 2x with our kids. Once when the smallest was 18 months. Fabulous. We do lots of hike, picnics, etc. Way better for us than a National Park. If you must fly, make it a big deal.

I'll throw a suggestion for us Yankees and recommend Acadia Natnl Park. You could fly into Bangor intnl and its a short drive. Tons of family activities (miles and miles of bike paths) and definitely different than the west with fresh lobster off the docks and affordable accommodations from camping, hotels and B&B's.
Good luck! Home - Acadia National Park

Thanks guys, I have a lot of research to do!
Bob, in particular thanks for the generous offer of your cabin. I'll let you know after I do some more reading.
