I agree with avoiding the processed stuff and go for whole foods as much as possible. Menu choices for me vary depending on altitude, terrain, and expected temps. I prefer to shop at Trader Joe's or a little Italian market rather than the grocery store for stuff. Dried fruit (peaches, apricots, bananas, pineapple, raisins, dates), GORP, hard cheese and hard salami, pasta, dried soups, powdered eggs, dried stroganoff, oatmeal, fresh onion and sun dried tomatoes are all in the mix. If I am in the Sierras I count on fresh trout to be the bulk of my protein.

I pack dried fruits, nuts, salami, instant potatoes, cous-cous, dehydrated veggies, tuna, tortillas, cheese (eat this first), mini-bagels, carrots, small packs of peanut butter, oatmeal. Sometimes I'll pack a frozen steak for the first night out (use it to keep other things cool and have it defrost on the hike).

Not a backpacker, if light weight is the prime consideration, I think I'd take dried fruit, powdered milk and cereal. I mean that's all from the corner store, right?
