+1 on you have to at least try poi... they have huge taro fields just outside of Princeville-Hanalei.

Still think Hanalei is the best if you want to just kick back on the beach, there are some resturants/bars/shops right there in the Hanalei village.

IMHO best fish can be had at small local fish markets.

Some good recommendations on Kauai have been put forth here by many....

I'll add this...for a great hike and beautiful views (weather permitting!?!) as Tevake suggested, try the hike at Ke'e beach far up on the North shore that takes you to views of the Napali coast. It's fairly intense so bring lot's of water. BUT make sure to start early as it gets very busy on that trail AND parking can be a real pain as there is very limited parking there.

If you're into deep sea fishing, I would highly recommend this guy:

Kauai Fishing Charters - Hawaiian Style Fishing located in Kapaa, Hawaii

A one man show on a fairly small boat but this guy knows where to hook 'em! Plus one of few charters that depart from Kapa'a instead of Port Allen.

There are also a few garlic shrimp shacks along the windward coast worth trying

Will you be venturing into town (on Oahu) much?

Spent some time on Maui in March two years ago...and there were whales everywhere! (heavy concentrations of whales from Jan. through April). Did lots of diving and could hear them talking to each other (sound travels great under water). Not sure about whales around Kauai at this time of year - but do make sure to get out on (and under) the water!

I'm a newby when it comes to Hawaii, but I'm going with a friend who lived there during her formative years, and she's taking me to places she thinks I'll enjoy.

We're staying one day in Kapahula, then a few days in Kailua, then off to Kauai where we'll stay in Kihei for the rest of the trip.

The plan is to rent a car and explore and check out fun stuff. (I've reserved Capt Andy's boat trip, Buzz's Steaks, we've got hikes planned and I'm pretty sure the helo ride is going to be part of the fun.)

Plus, Shane has given me his number, so hopefully I can do a Pelican meetup to make the vacation complete!

Try to get a Jeep on Kauai. When I was there some roads were still dirt. Oh and watch out when hiking over lava. That stuff is sharp!
