Friendly reminder: Chicken thighs (boneless) are the ANSWER...

seriously. we never buy chicken breasts any more. boneless chicken thighs are soooo damned good for anything from grilling to wok to whatever you like.

want that mall food court chinese chicken you get from the sample guy? chicken thigh!

why can't I get tender chunks of chicken breast in my stir fry? Chicken thigh!

what is the best possible meat to soak in oil and soy/terriake for a few hours before grilling on high? chicken thigh!

chicken thigh is to chicken breast as her on top is to missionary! so much more to see and enjoy!

if you are stuck in that plain Jane chicken breast world you have got to go try the real deal.

+1

Last night I browned lightly floured chicken thighs in cast iron and then tossed them into toaster oven to keep warm. Then sautéed shallots and mushrooms in same pan. De-glazed with red wine and tossed the chicken back in.

I only cook chicken thighs or whole chicken.

Thighs - because they are dark meat - have more nutrition in them than breasts. That's why I use them over breasts.

I always keep frozen chicken thighs in my freezer, but the boneless type. It's really the only thing I cook, when I make chicken dishes. The reason I buy thighs with bones is that I have a pair of hawks I give food to, and they love the bones with some meat left on them.

I'm not sure how to interpret "nutrition" - I do agree they have more flavor. However, they are not more healthful. That is why many "healthy" recipes call for chicken breast meat - rather than thighs - or drumsticks.

https://www.eatright.org/food/nutrition/dietary-guidelines-and-myplate/breasts-vs-thighs-which-is-more-nutritious

Excerpt:
Some people prefer the taste of dark meat over white meat and consider it to be more tender and flavorful.

Both chicken thighs and breasts are good sources of lean protein. However, they differ in the amount of calories, fat and saturated fat. For example, a 3-ounce skinless, chicken breast provides about 140 calories, 3 grams of total fat and just 1 gram of saturated fat.

The same amount of dark chicken meat without the skin would provide three times the amount of fat for a total of 9 grams of fat, 3 grams of saturated fat and 170 calories. This difference may not seem like much, but depending on the portion size it can really add up.

I, like most Americans, have no nutrient deficiency. (In fact most of us consume too much). Chicken breasts are delicious and adequately nutritious and quite tasty when cooked properly, as are the running gear cuts. The secret is how you cook them.

Breast and thighs may as well be from different animals.

They are so different. I like them both fir different applications.

But thighs are damn forgiving in the cooking dept. they are difficult to ever cook.

Thanks Mark - I stand corrected. I always believed them to be more nutritious....dang. Well at least they do have more flavour!

The only way to make breasts is to brine them first and cook Slowly. Or you need to pound them flat to breakup the fibers.

Never made a dry chicken breast on the grill and I don't cook them slowly. I have mastered the fork test that tells me when they are done. The boneless thighs are the boss when it comes to making oriental dishes. Sooooooo yummmy...
Yeah... I'm a breast and thigh guy.
