Dash Trim

Still working on my project car and have decided to go with wooden dash trim. The problem is I can't find any and have already welded up radio and heater control holes in the dash so factory trim isn't going to work.
Is there anyone out there reproducing them without the cutouts, or has someone already done this and can give me some pointers.
Also does anyone know where I can get the lower knee trim without the ashtray.

Do you have any woodworking shops nearby? I was thinking about doing what you're doing and I was looking at burled cherry or walnut veneer. Seemed as though it would slide in where the factory trim slides in.
