What is that thingy that's connected to my Oel Filler? Is that the PCV valve that I haven't seen yet? If so how do you replace it?

That is the oil/air seperator.
there is no "valve" in there to be replaced per se, but it can benefit from a good cleaning. AFJuvat

That's exactly what it's gonna get! It was leaking around the O rings that go in the block (ok, i wouldn't have done that were I a german engineer), so I'm taking it all apart from the breather to the manifold. Cleaning the $*it out of it, tightening the hoses, washing that area that doesn't see sunlight.

There was only on oring on top. and yes, I had to change the dipstick seal, too.
