Overheating

We are working on a 2006 Cayenne S 4.5L. It came in as a no start and a coolant leak. We fixed the no start by replacing the starter. We also replaced the plastic pipes under the intake with the updated aluminum ones. We also replaced the coolant tank because it was leaking at the seem. We vacuum filled the cooling system. Now it wants to overheat after 3-4 miles of driving. The fans are working and we have water flowing thru the heater core. Runs about 220-240. Any ideas. Customer states that it wasn't doing that before.

I should run at 180 all day long. Thermostat no opening ?
