My '81 930 ran at the same temp as your guage shows. My 78 911SC ran hotter so I thought the guage was not correct. I converted to the temp guage with numbers and it still ran at 180. I even replaced the thermostat (over $200 used) and it made no difference. My conclusion is that the turbo engine with its lower compression and conservative cam and ignition timing just runs cooler. On the street, I can not get it to run much hotter. On a very hot day with the air on and sitting in traffic it will heat up to 220 but as soon as I start moving the temp drops back down. I have a front dam mounted B$B oil cooler.
