It's funny you mentioning keeping the rubber on pedals..
thats exactly what I'm doing.. I dug up an old set of rubbers that I used for a pattern so basicly my new pedals will have the shape of stock pedals but with better grip features and to hold them on I'm going to bond the new pedal faces onto the rubbers using some Hi end epoxy. as for the gas pedal that one will be attached using hardware so I can adjust as required. My dead pedal.. well today while I was looking around at the metal market I found some aluminum 11 gage diamond plate. and the best part...
all the material $5.00 BUCKS total.. which also included stock material for my Optima battery hold down clamp.
