Honestly, this could be a lot of things. Frankly, you might have a coolant leak and just ran dry.
Another thing is proper fan operation. The fans don't even run at all when the temperature is below 92C (just under the 2nd white mark on the late cluster). At 102C the main fan should go into high-speed mode. The second mark in the gauge is 100C so just after it the fans should be high-speed.
I know on my '86 the fans don't really when the car is moving over 30MPH. Only sitting at a lot of stop and go traffic does it get high enough to trigger the fans at all.
