Michelin TB15's are the only street tire still available for the fat 15" rims. I run 215/55/15's on 8x15 rims for the front, and 295/40/15's on 11x15 rims on the rear of my '79 turbo. They also make a 270/45/15 that will work on a 8.5"-10.5" rim. They're about $500 ea.
Going to a 17" will make the car feel stiffer due to the shorter side wall.
