I have come to the conclusion that the S comes from the factory in a very mediocre state of tune. My solution was the Staintune, Boxer Performance cam sprockets (for a little extra mid range, though not required), and the gem... an FIM chip tailored for the setup. FIM in australia makes something like 9 chips for the different variations: Staintune, Staintune + Sprockets, Staintune + Cam + Sprockets, etc. etc.
If you do any one thing to solve the stalling, and mediocre running, definitely install an FIM chip. You won't be sorry. The bike will run as smoothly as it should have from the factory, and you'll have noticeably more power and better throttle response.
