Some prefer them....I think they might be lighter and you can not light S.S.
on fire.......but there is the whole arguement on the cooling facter/heat transfer ect .ect.

The company doing the valve job should make the decison on what needs replacing. If they are competent you will get good heads back. If a part, a valve is well withing spec, stem and all, and can be reground and still have spec margins it should be used. If the valve is marginal and will wear out soon it should be replaced. Thats the grey area. If you do not specify otherwise, you should assume that anything within spec., will not be replaced.

yea....that might be a trouble.....if you do not do valve jobs,the area is vauge......I would tell your rebuilder to replace if any question at all as the parts are not that spendy...just the time to do it real right
