How do the camshaft cover plates come off?
I have removed all the sprockets and shims, but these covers won't budge.

Just did that today. You may have to pry the edge of the cover. It is pressed in with a o-ring and has a tight fit. Assume you removed the 3 allen head bolts already.
Also, depending on what you are doing you may want to tilt the motor to the left so nothing can fall inside the case.

It's a full teardown/rebuild for a racecar. The three allens you mention aren't allens on mine if they are the ones that came out of the three holes shown. They were 10mm bolts. Would there be any harm in using a slide hammer lightly in each of the three holes, using some sort of tip that I could wedge into the holes?

just use the cam as a slide hammer. They are just hed in place by an o-ring.... Lou

You need to remove the woodruff key on the cam. You'll notice a very small half-moon shaped little piece on the snout of the cam. Line up a small screw driver under the lip of the piece, and tap until it pops out enough to remove. Then, loosen the chain box nuts holding it onto the case and tap on the back side of the chain box to break the o-ring seal. Then, after you get the head stud nuts off, move the heads out about 1" from the cylinders, pop off the chain box, and remove the head assembly as one piece. I think it's easier to lay the heads down on a table and remove the rocker arms on the bench, as opposed to on the motor.

What he said. Woodruff key, case nuts and your done. If it sticks use a rubber mallett and pop it off.
