3.0 l rebuild / carb question

Im looking to rebuild my 81 SC so far I am looking at
95 MM P & C JE - 10.5.1
Twin Plug, have the electronic ignition
Have 3.0 heads rebuilt but not ported or polished (suggestions)
Will 40 mm Webers work (I have a set rebuilt already) with this and if so what camshaft set up?
Looking for a fun torquey road car and occasional track use.
Was going to go SS but now looking at 3.0l high compression twin plug with carbs am I on the right track or completely mad??
