On my 74, and most of the side-shifter 914s I know, the cables run above the bar or (in the case of the clutch cable) through a hole in the bar. They do wind up bending out to the side, but not too absurdly far generally.

Pretty much any way you keep them from hitting things (fan shroud, exhaust, road debris, the road surface, etc.) is fine.
