I just completed an AOS and water pump replacement on my 1999 boxster, 72k miles.
CEL comes on and throws a code P0134 Bank 1 Sensor 1 02 Sensor.
The AOS did fail and I cleaned as much oil out of the intake and throttle body as I could. The car has been back on the road 2 days, light came on and I checked the code today. Cleared the code and ran the car again. Running well all day today. Question is, should I wait and see if the CEL comes back on with the same code or is there a chance I'm simply seeing some residual oil causing the mixture to be off from the AOS failure?

The oil may have contaminated the sensor. There is a chance the code may stay away. If it does consider yourself lucky. As O2 senors generally do not recover from contamination.
