I have the factory analog oil gauge. At 60 MPH highway it occasionally will drop to zero and then back to normal. The engine "idiot" oil light does not come on. It is possible the oil viscosity is breaking down, or ?

I would assume you have either a pressure drop, sensor failure or wiring issue. First thing to do is to check oil pressure when the problem is present. Once confirmed it is good, look at the sensor and wiring.
