right or wrong..i think for a Smash burger a indivicually wrapped slice of American cheese is appropriate.

Burger cheese has to be full flavored, no jack or anything like that. There are so many flavors going on at once that the cheese needs a kick-it-up-a-notch and get in line with the rest of the flavors.

No one cheese is the answer, just something that is not 'missing' and just more fat. We used a better grade pepper jack quite a bit.

One of my favorite cheeses is Danish or German Tilsit, but I wouldn't use that in a burger — or at least haven't.

And, if you have a Whataburger near you, just go get a double meat, double cheese with everything on it and take the rest of the day off.

Port Wine Cheddar spread was a favorite at a place I used to work. They also offered horseradish cheddar spread.

Then only "cheese food" mom knew until Velveeta came along. So I grew up without real cheese...and cottage doesn't count either
