Is there a bad way to have an egg?

soft scrambled
hard scrambled
fried (sunny or over)
poached
etc....

It's not easy to fark up an egg.

But it is possible.

Thousands of restaurants across the country **** up an egg every time they cook it. Order an egg in a breakfast diner and the odds of getting it properly cooked are about 1%. I won’t order an omelette in a restaurant, unless the waiter agrees to go back and teach the cook how to cook it properly. Thin, over-cooked, filled with pre-cooked crap, it’s almost guaranteed. America can’t cook eggs.

Have a decent French chef cook you a good omelette sometime, or scrambled eggs, for that matter. Done right, they’re great. Done like they normally are, the dog gets to eat it.

My first choice would be a French style omelette with a crab sauce, but then, I’d probably have to cook it for myself.

When my daughter had surgery they cooked an omelet at the commissary for us. It had a very custardy texture to it and was pretty good. i like scrambled eggs with a custardy texture as well. Most people overcook scrambled.

The free breakfast at hotels on the other hand are an egg like substance in the pan. They are the "American Cheese" to a proper WI cheese.

The texture of an egg changes dramatically when it gets to be overcooked, and it gets overcooked in a big hurry. I find it funny, I picked this picture of a sad, pathetic attempt at omelette cookery from a site that was trying to teach people how to cook a proper French omelette. This pathetic thing is a poster child for everything you can do wrong when cooking one, yet this is the finished product they suggested you should shoot for.

Well like when we spoke last week, no rush on the Tranny since I'm not moving anytime soon.

But fair warning, if I get bored I may bust out the welding gear and turn it into dinosaur yard art. :D

I often wonder this about MOST of the food we eat.

My favorite eggs...breakfast burrito. Scrambled with sausage or bacon (or chorizo), cheese, some jalapeno, and cilantro. With or without hot sauce and sour cream.

Eggs are my wife's comfort food. If she's not feeling well (mentally or physically), eggs are the go-to. I've experimented a lot on her...lol.

Cindy cooks them several ways...

The eggs themselves? Barred Rock free range hens...brown eggs. Delivered every week by a friendly neighbor...$4 a dozen. Glad to pay it.

When I'm lazy, two pieces toasted OatNut bread.....I time it after the water is boiling, drop it two eggs, when the toast pops up....I pull the pot off the flame, butter the toast, strain the eggs from the water, plop it on top the toast with warm salsa and enjoy.

When I have a Betty on a sleep over, double it up with strong fresh ground coffee. A shot of Jameson helps if I need a little lead in my pencil.. :rolleyes:

I have a weird thing about eggs.
I like them almost every way mentioned here.
All the pictures look absolutely delicious to me.
But if I make them myself, no matter how good the come out, I can hardly eat them.

If making scrambled: beat a tablespoon of mayonnaise into 2-3 large eggs. cook over medium-low.
omlette: beat the eggs until runny like water. Usually around 3 minutues. There will be bubbles and no bitumen blobs. Melt more butter than you think you need in a small non-stick pan. I like Julia Child's method from her classic book.

That looks more like a diner omelet, which is not a horrible thing.

I was eating breakfast with a group that I was trying to sell a contract to. Had to be nice. The guy across the table ordered pancakes and eggs. I watched as he unstacked the pancakes, plopped an over easy egg on the bottom one, poured on the syrup, and repeated with 2 more cakes and 2 more eggs.
I kind of lost my appetite as he cut into it and the egg yolk mixed with syrup squirted out.
