How do you like your eggs?

A female friend of mine told me unfertilized. lol

Lately, I've been on a kick boiling my eggs to between soft and medium. Peel them, add a little salt, like a hard boiled egg, then bite down into the oozing, gooey goodness! Repeat.

Eggs Benedict is my favorite, but difficult to make.

Over Easy with sea salt, and ground black pepper, a slice of cheese, mayo on white toast as a sandwich.

Never heard of eggs in a taco. Not like Hawaii is a Mexican food hub.

I like them from the 70s when eggs had actual flavor. I've tried every egg in the supermarket and they just don't have the same depth of flavor and richness as CT & MN in the 70s. I would be happy to pay $1 per egg—$12/carton for the same flavor I remember.

I eat a lot of eggs. And small batch bacon which is significantly better than regular bacon.

Over-easy on heavily buttered toast is a favorite.

I never cared much for scrambled eggs until I read someones method on this forum a few years back.
Now I love them...so much more flavor than the way I had been doing them.

Over easy to over medium or poached.

At the start of the pandemic last year we were getting eggs from a guy about a mile down the road. Chicken, duck, and guinea fowl.

Huevos Rancheros!!!

I omit the tortilla often but it is traditional to have one.
Pinto beans- home made
Fried eggs - runny yokes
Higher quality salsa heated in skillet with eggs
Combined with a sprinkle of cheese and hot sauce

A killer meal. I like to have it before skiing.

Fried over easy. I found the perfectly weighted and dished skillet, never a break when flipping them. Just a little flick of the wrist.

Breakfast Tacos. You can't throw a rock around here without hitting a taco truck. And if you do miss, you'll hit a church...

I was introduced to them in college, about 40 years ago.



One of the best places in Texas is Torchy's Tacos. They really make omelets that they slip into a tortilla. The names of the various types are hillarious.
