My '88 was the same, front lip but no tail. Up around 130-140 I felt it get a little light in the rear. Having only one spoiler (either) throws the balance off. Mine probably also needed new shocks when I made my run which I'm sure didn't help.

I can only assume the difference is that tracks are likely wider surfaces with no lines and fewer things (trees, poles, etc...) near the driving surface so the reduced visual reference points reduce the effect of speed. I think that's why when Top Gear or other shows do shootouts for top speed on a runway, they have to put braking markers to help the drivers with a visual clue on when to jam on the brakes. Driving 60mph down a narrow street with cars parked on both sides would be scarier and probably feel faster than 100mph on an empty highway with 8 lanes.

the problem with the Ring is that there are to many idjuts in cheap DRT's around that are chasing a lousy second and will slow down for nothing.
First time i went it was luxury, Rock am Ring and all the jerries were still in their tent nursing a hangover.. so hardly any traffic.. second time I went one of the idjuts had done a boobo within 6 minutes of the track opening and it was track closed again after my initial lap. I did not feel at ease that day, you could smell something was going to happen , everybody was driving on edge.. I went RTB via the autoban , that was when i clocked the 268 on the speedo of my cayman. all those cheap Dedicated Ring Toys are very cheap and repairable, but if they plow into me, their insurance won't fully compensate my damage and the hassle to get home I never had that with Porsche club track days, people tend to be a bit more sensible when every car is a shiny nice Porsche.

Old air cooled 911s, probably 100mph, even my 1983 SC.
Where I live the best roads are surrounded by trees and deer...it is hard to drive fast, even during non-deer hours. That said, in my 964, all 250hp of Teutonic love, there were two opportunities to let the dog eat, each about a mile of clear straights when the corn and soybeans had been harvested, unlimited varmint vision: I could get to 120 and back down in time for my turn. Loved it.
