Limoncello

First time making Limoncello.I used fresh Myer's lemons from the back yard.
I'll infuse the lemon peel for 3 weeks.
Next comes the simple syrup.
Any pointers?

I just use the zest , the whites of the lemon are sour and therefore the drink will be also add
simple syrup to taste

Don't need to, too many other goodies in the house. Besides Limoncello is more of a Christmas drink, to me anyway.

Yeah, a good friend makes a couple gallons a year. He uses a microplane grater to zest the lemons, like 100 of them. I think he's nuts, but its damn good stuff.

I make it the way you do. Just add the simple sugar to taste. I like mine less sweet.

A local restaurant uses this method. They have the jars all over the walls. They also use Everclear which I did until ot got too expensive. https://gizmodo.com/how-to-make-the-best-limoncello-youve-ever-had-1533528095
Directions:

Pour vodka into a clean glass jar.
Wrap lemons in cheesecloth and suspend over vodka (using the twine to secure them).
Seal tightly, and let sit undisturbed (in a cool, dark place) for one month.
After one month, discard lemons, then add syrup and the fresh zest of two new lemons.
Let sit for 15 minutes, and strain through a fine mesh sieve (or more cheesecloth).
Chill and then drink up.

Yup, that's what I'm using, Everclear. I don't like it as sweet either. What ratio of simple syrup do you use Bob?

I used everclear to make a blackberry liquor. I wanted zero flavor from the alcohol. Diluted back to less flammable with distilled water. It was a hit!

I don't have a formula- I just start adding simple sugar till I get the taste I want- but with Everclear, you also need to take alcohol content into consideration.

The Limoncello came out delish.This is the last batch.The lemon peel has been soaking in grain alcohol for the past three months. Ok, This time there will be no waste. Now it’s time to make candied Limoncello lemon peels.

My sister makes that stuff. I trade her for home made kahlua. I have a lemon tree. Currently, pink grapefruit is gravid. Salty dog with that juice, very not bad, and I am not a big grapefruit guy
