I think chili is a lot like barbeque...it varies so widely depending upon the locale and personal techniques. Just like BBQ (any style, meat, etc.), I've never met a bowl I didn't like, but for some reason, DTW's scares me...I can't take things as fiery as some "pepper connoisseurs" that I've known...I've learned the hard way
