Nope, not eating farmed. Just looks a little too orange to my eye. I've caught a few and then eaten them, some raw, some cooked.

Why do you think they add the color to the farmed salmon in the first place? To make it look like the real stuff.

Actually, they also color maguro. It's a freshness appearance issue not just farmed vs not farmed. Do you also catch salmon? About the closest to that color that I've seen is Copper River (AK). O/W in fresh caught, I haven't seen that much darkness.

Freshly caught Spring or Sockeye in these parts is bright red—like in those photos.

Not fancy, unless we're talking about Masa or the like.
My favorite sushi bar here in Seattle is a little family run place. The father and son take turns behind the bar, mom cooks, daughter waits tables. Certainly not fancy, though if we're in the mood for something different the son will slip us a "yuppie fusion roll" as long as we don't let his dad see it. Sometimes you really just need a huge beast of a roll with all sorts of fish and fried stuff inside. |

Is that different than any other Unagi or Anago? One is fresh water, one is salt. Both are broiled/barbqued with a sweet sauce. Very, very tasty!

I think it's hard to dislike Shiro's. All the food I've eaten there was excellent. Most people I know think the dining room is too sterile, and I would tend to agree.
Tsukushinbo is more of a country-style place, with a slightly smaller, simpler menu and a more casual, friendly, cozy atmosphere. It's the kind of place you go with a few friends, order more food and sake than you think you need, and unwind. It's a bit like Maneki (just around the corner) but with better food and no Yelpers. Now I feel like I'm talking it up too much... ![]() Quote:
