My 87 year old Hungarian father-in-law relishes fried pork grease balls that we buy at select delis for him. And he gobbles smoked bacon. The fattier the better. To him it is comfort food.

here is my dad's secret duck roasting method.
find empty steel drum, wash out the old oil/toxic chemicals (optional) get 3-4 toasters from junkyard, strip out heating elements hang heating elements inside of drum using scrap wire make a crucifix-thingy for duck from clothes hanger, holds duck vertical season and roast duck, fat renders out and drips to bottom of drum duck skin is crispy, meat is moist but not oily the whole thing was a fire and electrocution hazard but his duck was famous (in our family anyway)

the german toast spread is called Schmaltz.
the thing i hate about not eating the old bacon egg toast breakfast anymore is the lack of bacon grease on the stovetop in the can.

How can you teach your kids to catch a greased pig if you have no grease?

Now in 993 land ...

Schmaltz means lard - includes the lard you use for cooking. Schmaltzbrot would be a piece of bread with lard on it. The larded bread is common in other countries too, i.e. France.
