Recipe: Bonefish Grill Bang Bang Shrimp. Enjoy!

Just because I like you guys and gals I'm sharing the highly coveted, top secret recipe for Bang Bang Shrimp. There are a lot of copy cat attempts out on the web, but this is the real deal. Have made may times for guests always to rave reviews. We had a progressive Valentines dinner with 5 other couples in the neighborhood and this appetizer was the hit of the evening. We also served with chicken nuggets using Thomas Keller's brined buttermilk fried chicken recipe (from Ad Hoc - Napa) with bang bang sauce on the side since one our guests is allergic to seafood.


BANG BANG SHRIMP

Bang Bang Sauce:
1 cup Mayo
3 Tbl Chili Garlic Sauce (Maggi or other brand)
1 Tbl Thai Sweet Chili Sauce (Maggi or other brand)
1 ½ tsp Lemon Juice

Iceberg Lettuce
Seasoned Flour
1 ½ lbs raw shrimp
Peanut oil
4 Scallions
Buttermilk


1) Clean and de-vein 1 to 1 ½ lbs shrimp. Soak in buttermilk (in fridge) 30-45 minutes

2) Dredge shrimp in seasoned flour ( 1 ½ cup flour/ 1 tsp cayenne pepper/ 1 tbl ea. powdered garlic, powdered onion, black pepper and salt)

3) Deep fry shrimp 2 minutes in good clean peanut oil @ 350-360 degrees.

4) Remove shrimp and drain on paper towels.

5) Place shrimp in large bowl and add ½ of the Bang Bang Sauce and stir/toss to coat while warm. (add more sauce as needed to coat evenly)

6) Serve shrimp on bed of shredded iceberg lettuce and garnish with chopped green onions/scallions

Used light mayo - just as good , half the clog factor

OK, before you ask here is Keller's buttermilk fried chicken recipe as recently published in Bon Appetite: This is really outstanding

Thomas Keller's Buttermilk Fried Chicken

24 cups water
1 cup kosher salt
½ cup + 1 Tbl Honey
18 Turkish Bay Leaves
30 Unpeeled garlic cloves smashed
3 Tbl black pepper corns
5 lg rosemary sprigs
1 ½ bunches fresh thyme
1 ½ bunches Italian parsley
2 Tbl Lemon peel
¾ cup fresh lemon juice

Combine all ingredients and bring to a boil for 1 minute to dissolve salt. Cool completely and chill approx 2 hours in fridge. Brine Chicken 12 to 24 hours in fridge.

6 cups all purpose flour
5 Tbl Garlic powder
5 Tbl Onion powder
4 tsp Paprika
4 tsp Cayenne Pepper
1 tsp fresh ground black pepper
4 tsp kosher salt + addl for serving
6 cups buttermilk

Coat chicken in seasoned flour mixture and shake off excess. Dip chicken in buttermilk and then back in flour mixture coating thickly. Do not shake off excess. Place on parchment lined baking sheets and let stand for 1 to 2 hours at room temp to dry.


Fry chicken pieces in batches of no more than 4 turning once about 13 min total until golden brown in peanut oil at 320 -330 degrees.

Hey, as long as you've got your deep fryer out, did I mention the Avocado Egg Rolls from Cheesecake Factory? If you can't find the tamerind pulp don't worry - leave it out and it tastes the same (ask me how I know). Always a party hit.

AVOCADO EGGROLLS.
*****************
1 large avocado
2 tablespoons chopped sundried tomatoes(bottled in oil)
1 tablespoon minced red onion
1/2 teaspoon cilantro chopped fresh
pinch salt
3 eggroll wrappers
1 egg, beaten
vegetable oil for frying

Dipping Sauce:

1/2 cup chopped cashew nuts
2/3 cup fresh cilantro
2 cloves garlic, quartered
2 green onion, chopped
1 tablespoon sugar
1 teaspoon ground black pepper
1 teaspoon cumin
4 teaspoons white vinegar
1 teaspoon balsamic vinegar
1/2 teaspoon tamarind pulp
1/2 cup honey
pinch ground saffron
1/4 cup olive oil

1) peel avocado, remove pit and dice into bite-size pieces
2) gently combine avocado with the tomatoes, red onion, 1/2 teaspoon cilantro, and a pinch of salt, be careful not to smash the avocado
3) spoon 1/3 of filling into an eggroll wrapper. with wrapper positioned so that one corner is pointing toward you, place the filling about 1 inch from the bottom corner and 1 inch from each side. roll the bottom corner up over the filling, then roll the filling up to about the middle of the wrapper. brush the remaining corners and edges of the wrapper with the beaten egg. fold the left and right corners over by filling and "glue" the corners to the wrapper. finish by rolling the wrapper and filling up over the top corner. press on the wrapper to ensure it is sealed. repeat these steps with the remaining two eggrolls and keep them covered in the refrigerator while you make dipping sauce
4) for sauce, combine cashews, cilantro, garlic, green onions, sugar, black pepper, and cumin in a food processor or blender. blend with short bursts until the mixture is well blended., and the cashews and garlic have been chopped into pieces about half the size of a grain of rice
5) combine the vinegars, honey, tamarind, and saffron in a small bowl. Heat mixture for about 1 minute in microwave and stir until tamarind pulp dissolves completely
6) pour tamarind mixture into blender or food processor with the cashew mixture and mix with short bursts until well combined (about 20 seconds)
7) pour blended sauce into small bowl and add oil and stir by hand. cover and refrigerate at least 30 minutes before serving
8) heat oil in a deep fryer or a deep pan over medium heat. You want the oil to be deep enough to over the eggrolls
9) when oil is hot, fry eggrolls for 3-4 minutes or until golden brown. drain on paper towels
10) when eggrolls can be safely touched, slice once diagonally across middle of each one and serve them arranged around a sauce dish with the dipping sauce
